Celeriac & Apple Soup
1/4 c (1/2 stick) butter
1 lb celeriac, peeled & cubed
2 medium apples, peeled, cored & cubed
1 chopped onion
4 c chicken or vegetable broth
1/2 c olive oil
Pinch of salt
3 strips cooked bacon (optional)
Melt butter in a heavy large pot over medium heat. Add celeriac, apple, and onion. Cook until apples and some of the celeriac are translucent, stirring often (about 15 minutes).
Add broth. Cover and bring to a simmer. Reduce heat to medium-low and simmer covered until celeriac and apples are soft, stirring occasionally (about 25 minutes). Remove from heat and allow to cool slightly.
Working in batches, puree soup in a blender until smooth. If thinner soup desired, add more broth in small amounts. Return to pot and reheat over medium heat.
Serve drizzled with olive oil and optional crumbled/chopped bacon.
