Pan-Seared Pork Chops with Peach & Cherry Chutney

Pan-Seared Pork Chops:

2-4 pork chops
Olive oil
Salt and pepper

1. Coat pork chops in oil, and season with salt and pepper.
2. Grill or pan fry until they've reached 145 F for medium and 155 F for medium-well.

Peach & Cherry Chutney:

6 peaches, peeled, pitted, and cut into 1/2-inch pieces
1/4 cup fresh cherries, pitted and chopped
1/8 cup minced sweet onion
2 tbsp apple cider vinegar
2 tbsp brown sugar
Salt to taste
Pinch of red pepper flakes

1. In a small saucepan, heat oil over medium heat.  
2. Add onion and red pepper flakes: cook for 1-2 minutes or until onion is soft.  
3. Add vinegar, sugar, cherries, and salt.  Cook for 1 minute or so until the mixture is syrupy.  
4. Add the peaches and cook for 6-8 minutes, stirring often, until peaches soften.  
5. Mash them a bit with a form to thicken the chutney.
